Batch production and shelf life: label so nobody doubts during service

Each batch with product, date, owner, and preferred use; how to size it and what to do with the remainder.

One batch, one traceable label

Keep the product name and batch identity with the production date and time, preparer, storage or holding conditions, and the approved service or discard decision. A production timestamp is not a shelf-life approval. Use the product-specific procedure and the supplier label; do not invent a new date because the batch was repacked.

Use-by and best-before answer different questions

UK government labelling guidance distinguishes use-by dates for safety from best-before dates for quality. Storage instructions still matter. This distinction does not assign a safe life to a restaurant batch or replace local rules. The FDA Food Code is a model for US jurisdictions; confirm the rules adopted where the restaurant operates.

A label and approval record to complete

ProductionDate, time and person who prepared the batch
Storage or holdingApproved conditions and the actual checks, with their times

Service or discardStatus, proposed action, decision time and approved instruction
Responsible approvalAuthorized role reviews the evidence and records approval before release

Fictional shift example

Batch B-02 has a recorded preparation time and an attached holding log, but its approved date basis is missing. Mark it pending review, keep its identity and follow the site's procedure for separating it from service. The authorized food-safety lead checks the missing basis and recorded conditions, then documents the service or discard decision. This example supplies no universal temperature, duration or permission to serve the batch.

Bring the notes into the current Studio

Use a private project to organize the records you supply and draft questions for the responsible reviewer. Wobistro does not read sensors automatically, validate shelf life or release stock. People verify the evidence and carry out the approved action.
