Restaurant closing SOP: reconcile the shift and leave a safe handover

Direct answer

A closing SOP controls final orders, food disposition, cleaning, equipment, cash, access and the next shift’s handover. The closer records unresolved items so tomorrow’s opener does not discover them by accident.

Trigger

Begin at the approved final-order time and finish after the last guest, order and staff task.

Accountable role

Closing shift lead with named station and cash responsibilities.

Procedure

  1. Close or update ordering channels at the approved time.
  2. Reconcile open tickets, reservations, voids, refunds and unresolved guest issues.
  3. Store, label or discard food under the venue’s approved procedure.
  4. Complete station cleaning and equipment shutdown checks.
  5. Reconcile cash where used, secure access and write the next-shift handover.

Completion evidence

  • Closing checklist and handover
  • Cash or payment variance report
  • Waste or disposition record
  • Security and equipment exceptions

Escalation rule

Escalate unresolved payment, security, contamination, equipment or access conditions before the responsible closer leaves.

Record unresolved exceptions, unavailable items, maintenance needs, incidents and the named follow-up owner.

Adapt before use

This template is an operational starting point, not a food-safety plan, emergency instruction, employment policy, accounting control or statement of local law. Assign trained owners and adapt limits, records, chemicals, equipment steps, emergency contacts and reporting requirements to the venue and jurisdiction.

Wobistro can support relevant digital-menu, ordering, reservation, ticket and staff workflows when enabled in the current plan. The restaurant remains responsible for safe operation and approval.
